Pasta with Cavolo Nero Pesto

This super green pasta is speedy and packed with brain-boosting veggies and brain-loving walnuts!
PASTA WITH CAVOLO NERO PESTO
Ingredients:
- 100g pasta (We like chickpea pasta)
- 150g steamed cavolo nero
- Handful fresh basil
- Handful walnuts
- 6tbsp extra virgin olive oil
- 100g spinach
- Parmesan cheese (optional)
Method:
- In a pan of boiling water add in your pasta and cook as per packet instructions.
- Whilst your pasta is cooking, blitz together the cavolo nero, spinach, basil, extra virgin olive oil and walnuts (keep some aside for the top) in your food processor until smooth.
- Once your pasta is cooked, drain it, reserving some of the pasta water.
- Combine the pasta with your green pesto and mix well until combined, add a little of the saved pasta water if you like a little more sauce!
- Once combined, pop your pesto pasta into a bowl and top with more basil leaves, finely chopped walnuts and a shaving of parmesan if you’re using. Enjoy!
