Salmon with Basil Pesto Mash

A delicious brain-boosting dish, rich in omega-3's to support optimal brain function!

 

SALMON WITH BASIL PESTO MASH


(Serves 2)

Ingredients:

    • x2 sustainable salmon fillets
    • Large handful fresh basil 
    • 30g pine nuts
    • 5 tbsp extra virgin olive oil
    • 2x large potatoes
    • Butter/dairy free milk (optional)
    • Dark leafy greens to serve

Method:

  1. Heat your oven to 180c and line a baking tray with greaseproof paper. 
  2. Boil your kettle and quarter your potatoes. There’s no need to peel them, the skins are packed with vitamin C! Once your kettle is boiled, bring your potatoes to the boil in a pan and cook until they are soft. 
  3. Whilst the potatoes are cooking, season your salmon fillets with salt and black pepper then place them greaseproof paper. Put your salmon fillets in the oven and leave to cook for 10-15 minutes.
  4. As the potatoes and salmon are cooking, in a food processor blend the fresh basil, olive oil and pine nuts together until smooth. This is your basil pesto.
  5. Once the potatoes are cooked through and soft, mash them up! You can add in a little butter or dairy free milk if you’d like them a little creamier. Once your potatoes are smooth, add in your basil pesto and mix well until completely combined. 
  6. When your salmon is cooked through, serve on top of the basil pesto mash with come steamed leafy greens on the side. Then enjoy!
