Warming turmeric & lentil dhal

This warming turmeric and lentil dhal is packed full of ingredients that will help to supercharge your immune system!   • 400g red lentils 
  • 2 tbsp turmeric
  • 2 tbsp ground cumin
  • 1 finely diced red or white onion
  • 2 cloves of garlic (crushed)
  • 1 fresh red chilli 
  • 30g fresh ginger
  • 3 large tomatoes
  • Handful of roughly chopped coriander
  • 300ml vegetable stock
  • Basmati/brown rice



1. In a frying pan gently soften the diced onion with a small amount of olive oil. Once soft, add in the spices, garlic, ginger and chilli and cook for 1-2 minutes until lightly fragrant.


2. Once the onion mixture is combined and nicely softened, add in the red lentils. Give the pan a good stir to make sure the red lentils are well incorporated into the onion mixture. 


3. To the pan add in the vegetable stock and reduce the heat to let the lentils simmer and cook gently. 


4. Whilst the lentils are cooking, finely chop the fresh tomatoes and roughly chop your coriander.


5. After about 10 minutes, add the fresh tomatoes into the lentils. The mixture should be beginning to come together and thicken slightly.


6. When the lentil dhal has been cooking for 25 minutes, cook your rice according to the packet instructions. 


7. Once your rice is ready, and the dhal has thickened serve them both in bowls and sprinkle the chopped coriander over the lentil dhal. Then enjoy!
